and low moisture mozzarella for cubing or shredding. All products are OU
certified -- a rarity in fresh mozzarella. Cappiello cheeses are made in
Schenectady, NY, and sport the "Pride of New York" stamp. The
Italian immigrant family has been making cheese since 1921. F. Cappiello
Dairy Products, Inc. has been under OU supervision via a local rabbi since
1993 and continues to make cheeses with all natural, kosher ingredients.
Although the cheeses are made daily, they are packed well and have a
generous shelf life.
Cappiello makes traditional fresh mozzarella in balls, braids that are plain, marinated (garlic/pepper and tomato/basil) or smoked, scamorza plain or smoked, and ricottas in various packages and styles. |

The rabbi's duties include personally adding the rennet to the milk, checking incoming raw ingredients to be sure they have the proper kosher certifications, and performing "hands on" kosherization and inspection of equipment to maintain sanitary kosher standards. The plant adheres to the Jewish religious calendar and does not produce cheese on holidays or days of rest. By producing kosher cheese on a daily basis -- instead of making a special kosher run during special Jewish holiday times -- ensures reliability, availability, and freshness. |

Great
cheese starts with great milk. At 5 Spoke Creamery in Westchester, N.Y.,
all of the cheeses are hand made in the farmstead tradition (produced on
site with a closed herd) from the raw milk of grass-fed cows. The milk
comes from Holstein cows that are free of pesticides and hormones. They
milk the cows at 4:00 A.M. and make the cheese at 9:00 A.M.
