Notes: Great for parties. The cheese is pre-sliced to cracker size. Adams Reserve won the First Place Blue Ribbon for its Adams Reserve New York Extra Sharp Cheddar at the American Cheese Society competition in 2010. 

 

Great Lakes Cheese also does private labeling. I have seen a similar cheese -- private label, pre-sliced, lower priced -- at Stop n' Shop in New Jersey, but it is not labeled as kosher. The Adams Reserve label includes other Tablet K kosher cheeses, but they aren't listed on the website.

Cappiello cheeses are made in Schenectady, NY, and sport the "Pride of New York" stamp. The Italian immigrant family has been making cheese since 1921. F. Cappiello Dairy Products, Inc. has been under OU supervision via a local rabbi since 1993 and continues to make cheeses with all natural, kosher ingredients. Although the cheeses are made daily, they are packed well and have a generous shelf life. 

Cappiello makes traditional fresh mozzarella in balls, braids that are plain, marinated (garlic/pepper and tomato/basil) or smoked, scamorza plain or smoked, and ricottas in various packages and styles. 

The rabbi's duties include personally adding the rennet to the milk, checking incoming raw ingredients to be sure they have the proper kosher certifications, and performing "hands on" kosherization and inspection of equipment to maintain sanitary kosher standards. The plant adheres to the Jewish religious calendar and does not produce cheese on holidays or days of rest. By producing kosher cheese on a daily basis -- instead of making a special kosher run during special Jewish holiday times -- ensures reliability, availability, and freshness.

Notes: Most Cabot "exact weight" cheeses that come in the clear sleeve-type wrappers common in grocery stores are certified Tablet K D Kosher and Crescent-M Halal. Cabot cheeses, with the exception of Colby Jack, Shreds, Slices (including American), 3/4-ounce Bars and Cubes are certified by the Islamic Food and Nutrition Council of America and by Tablet K. 

However, cheeses cut into irregular weights and packaged in the faux-parchment sleeves are not certified kosher, nor are the cheeses that have been sliced on an in-store dairy slicer and re-packaged and re-labeled in the deli--unless the deli itself is under strict kosher supervision.

The package reads that the Schtark family started making kosher cheese in the 1930s in Switzerland. The children migrated to other parts of the world and also went into the food business. The logo is "Zay Gezunt un Schtark!" (Be Healthy and Strong! in Yiddish, but with a play on words with the family name Schtark and the Yiddish word "shtark" for "strong.")

How much hashgacha does one cheese need?!
Oneg's Schtark line is cholov yisroel, but the Oneg label cheeses are cholov stam. 

 

Sugar River Cheese

Mark Rosen started Sugar River Cheese Co. in 2002. His Cheddars and Monterey Jacks appear on specialty shelves across the country as well as on kosher shelves. They appeal to a broad range of palates for their intriguing variety of flavors as well as the premium milk - which is obtained from small family farms in Wisconsin where the cows are treated with no rBGH (synthetic growth hormone). Notes: Sorrento's 100% natural mozzarella now comes in a fresh log, ready to slice. The cheese is soft and delicate, so the producers have designed new packaging that both protects the cheese and allows for easy opening. The log itself is in plastic with a pull tab on one edge to eliminate cutting of the plastic which may damage the cheese.

 

The log of cheese protrudes from each end of the flexible cardboard sleeve, and there is a window for cheese viewing in the center. 

On the back, there is a pull tab on the sleeve. Once removed, it releases the log of mozzarella. 

Since this mozzarella is in a log form, it is easy to slice; a Caprese salad comes out with even shapes of mozzarella slices instead of irregular slice sizes.
